Halsey's Delicatessen and Tearooms, 11 Market Place, Hitchin (01462 432023)

Damian and Kirsty Caldwell's deli is a little further afield, but worth visiting for their devotion to local food. Every day they roast a joint of meat and serve hot sandwiches that can be eaten in their café or taken away.

Vegetables are local, with mileage marked on a slate by each box; eggs are from Lidlington, Beds; sausages are made by a Hitchin butcher; and the pies are from Essex Larders in Great Dunmow.
